Cut the potatoes into chunks, then boil them until just tender (about 12-15 mins). Drain them and then let them steam dry and cool down a little.
Whilst the potatoes boil, fry the bacon until crispy, then finely chop.
Finely dice the red onion, finely chop the chives and roughly chop the sundried tomatoes.
In a bowl mix together the mayo, pesto, lemon zest, lemon juice, red onion, chives, sundried tomatoes, grated Parmesan, salt and black pepper.
Add the potatoes to the bowl and mix until combined. Top with crispy bacon and chives, serve and enjoy.
