Zucchine Alla Scapece
  1. Slice the zucchini thin with a mandoline.

  2. Fry in hot oil until golden brown and crispy, work in batches!

  3. Drain on paper towels and salt while hot.

  4. In a bowl, mix olive oil, white wine vinegar, garlic, and mint.

  5. Layer the zucchini in a dish and drizzle the dressing on top.

  6. Let it sit at room temp for 15–30 minutes so the flavors soak in.

  7. Serve with crusty bread
