Bolo De Coco (coconut Cake)
  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan.

  2. Whisk together the flour, baking powder, and salt.

  3. In another bowl, beat the eggs and sugar until light and fluffy.

  4. Mix in the melted butter, coconut milk, and vanilla.

  5. Stir in the shredded coconut.

  6. Fold the dry ingredients into the wet ingredients.

  7. Pour the batter into the prepared pan. You can sprinkle with more coconut on top.

  8. Bake for 35–40 minutes, or until golden and a toothpick inserted in the center comes out clean.

  9. Let cool before serving.
