Cut chicken thighs into bite size pieces
Grate one garlic clove on a microplane
Add a little bit of ginger
Add some black pepper
Add a little bit of tamari soy sauce
Add a light splash of vinegar
Wrap chicken in plastic and stick it in the fridge
Cut shallot straight through the middle, then turn and cut straight through the middle again, continuing until it gives nice little petals
Split broccoli stalk, pick it up with hands, then use hands to pull florets off
Pinch the top of snap peas and pull the string right out
Add 4 minced garlic cloves to a bowl
Add a few tablespoons of soy sauce to the bowl
Add some more vinegar to the bowl
Add a little drizzle of honey to the bowl (optional)
Add a little bit of sesame oil to the bowl
Dust chicken with a little bit of cornstarch
Dust chicken with a touch of baking soda
Add a little bit of oil to a hot wok or saute pan
Add coated chicken to the wok or saute pan
Spread chicken around as best you can
Cook chicken for a couple minutes until it has some color
Stir chicken and cook until fully cooked, maybe 5-6 minutes
Remove chicken from the wok/pan into a separate container
Add shallots and green onion to the wok/pan
Cook shallots and green onion for a couple minutes
Break up shallot layers until they start to blister
Move shallots and green onion to the side
Add other vegetables to the wok/pan
Cook vegetables until they get a little bit of color
Add chicken back to the wok/pan
Add the sauce to the wok/pan
Stir everything together until chicken is glazed in sauce
