Mix dry ingredients (flour, sugar, salt, baking powder & soda) throughly
Mix wet ingredients (milk, oil, vanilla, cider, eggs) throughly
Pour in wet ingredients to dry, and fold in about 20-25 times, (do not over mix, lumps are ok)
Let rest for 5-10 minutes
Grease a hot medium heated griddle/pan liberally with salted whipped butter
Spoon a dollop of batter on to griddle, do not press down (ever!) but lightly shape pancake
Turn when bubbles pop on tops
Serve with butter, Vermont maple syrup or any other toppings you enjoy
