Pancakes (fluffy!)
  1. Mix dry ingredients (flour, sugar, salt, baking powder & soda) throughly

  2. Mix wet ingredients (milk, oil, vanilla, cider, eggs) throughly

  3. Pour in wet ingredients to dry, and fold in about 20-25 times, (do not over mix, lumps are ok)

  4. Let rest for 5-10 minutes

  5. Grease a hot medium heated griddle/pan liberally with salted whipped butter

  6. Spoon a dollop of batter on to griddle, do not press down (ever!) but lightly shape pancake

  7. Turn when bubbles pop on tops

  8. Serve with butter, Vermont maple syrup or any other toppings you enjoy
