Add chicken to a bowl with chipotle peppers, avocado oil, onion powder, garlic powder, cumin, smoked paprika, oregano, salt, and pepper; mix well
Marinate chicken for at least 2 hours
Dice sweet potatoes into ½" cubes and toss with olive oil, onion powder, garlic powder, smoked paprika, salt, and pepper
Air fry sweet potatoes at 400F for 20 minutes until tender
Thinly slice bell peppers and red onion, toss with avocado oil, oregano, salt, and pepper
Sauté peppers and onions in a pan on high for 8 minutes until tender
Add corn, black beans, green chilis, water, onion powder, garlic powder, paprika, cumin, oregano, salt, and pepper to a pot
Simmer bean and corn mixture covered for 10 minutes until tender
Bake chicken on a wired rack at 400F for 30 minutes
Broil chicken on high for 5 minutes until internal temperature reaches 165F
Rest chicken for 10 minutes before cutting into bite-sized chunks
Whisk together mayo, hot sauce, and lime juice to make spicy lime mayo
Assemble bowls with chicken, sweet potatoes, peppers and onions, and black beans and corn; top with spicy lime mayo
