Corn Fritters
  1. Place the corn kernels, flour, sugar, baking powder, salt and pepper in a large bowl. Stir to combine.

  2. Add the eggs and milk. Stir until a thick batter forms. Add the green onions and cheddar cheese and gently stir to combine.

  3. Heat ½ inch of oil in a deep pan over medium high heat. Place 2 tablespoon size mounds of the fritter mixture in the pan, then flatten them.

  4. Cook the fritters for 3 minutes per side, or until they're golden brown and crispy. Repeat the process with any remaining batter.

  5. Add toppings if desired, then serve immediately.
