Chipotle Chicken Dense Bean Salad
  1. Cook 1.5 lbs chicken breast

  2. Drain and rinse 1 can chickpeas and 1 can great northern beans

  3. Dice 3 bell peppers and finely mince 1 shallot

  4. Chop 1 bunch cilantro

  5. Combine cooked chicken, beans, corn, bell peppers, shallot, and cilantro in a large bowl

  6. In a separate bowl, whisk together olive oil, red wine vinegar, honey, chipotle peppers in adobo, water, salt, black pepper, and dried oregano to make the dressing

  7. Pour dressing over salad and squeeze juice of 1 lime over top

  8. Mix well and let sit for best flavor development

  9. Divide into 6 servings
