Gather all ingredients.
Heat 2 inches oil in a deep saucepan over medium heat to 365 degrees F (185 degrees C).
While oil is heating, grate onion with a box grater and catch juices in a medium bowl. Add the sugar and eggs. Blend in flour and cornmeal to make a batter.
Drop batter by rounded teaspoonfuls (half an ice cream scoop), 10 at a time, into hot oil and fry until golden brown, around 2 minutes, turning constantly. Transfer to a paper towel-lined plate to drain.
