In a large bowl of a stand mixer, mix together the oats, protein powder, peanut butter, honey, and vanilla extract.
Gently mix or fold in the mini chocolate chips and mini M&M's.
The mixture should feel like thick cookie dough but if it’s too sticky, you can add 1-2 Tbsp. more oats and mix again. OR if it feels too dry, add a little more peanut butter or honey until you can roll it into balls.
Using a small cookie scoop (about 1½ Tbsp), scoop and roll into balls. You should get ~18-20 balls. You can press a few extra mini M&Ms on the top after you roll them for a finishing look.
Place in the refrigerator or freezer for 20-30 minutes to firm up. Then enjoy!
