Maltese Baked Rice
  1. Fry off onion in olive oil until softened.

  2. Add minced garlic and cook briefly.

  3. Add ground beef and cook until browned.

  4. Add salt, pepper, and dried oregano.

  5. Stir in tomato paste.

  6. Add passata or crushed tomatoes.

  7. Add curry powder (if using).

  8. Add water or stock.

  9. Simmer for about 15 minutes until the sauce thickens slightly.

  10. Stir in cooked rice.

  11. Let the mixture cool down.

  12. Stir in grated cheese, chopped parsley, and beaten eggs.

  13. Add Parmesan cheese (if using).

  14. Transfer the mixture to a baking dish.

  15. Level out the mixture.

  16. Top with more cheese and Parmesan.

  17. Bake at 180°C / 160°C fan / 350°F for 35–40 minutes until set and golden.

  18. Let the baked rice set for about 10 minutes before serving.
