In a large mixing bowl whisk the eggs and the cornflour together until it's combined. Add the chicken, broccoli and mozzarella and use a spoon to fold everything together until it's well mixed.
Heat a little olive oil in a frying pan over a medium-high heat. Spoon the mixture in to create circular patty shapes, and fry for around 4 minutes before flipping and fry on the other side for a further 3 minutes
Remove from the pan and use a knife to check on the the patties to make sure the chicken is cooked through, allow to cool slightly and serve
Store in the fridge for up to three days. Suitable for freezing
