  1. Combine all of the 'salsa' ingredients in a large mixing bowl then place to one side.

  2. Horizontally slice both chicken breasts right through the centre to create 4 even-sized breasts. Coat both sides with the Cajun seasoning.

  3. Heat 1 tbsp oil and butter in a large pan over medium-high heat then add the chicken. Fry for around 3 minutes on each side or until lightly charred and just about cooked through the centre. Remove and place on a plate to one side to rest for a couple of minutes. Melt the 2nd tbsp of butter in the pan to collect all the leftover flavour.

  4. For the rice just mix in the black beans, lime juice and coriander/cilantro. You can also mix in any resting juices from the chicken.

  5. To serve, place the chicken next to the rice and drizzle over some of the butter in the pan. Top with salsa and few lashings of hot sauce if desired. Enjoy!
