Begin by cooking a potato in the microwave or baking it until it becomes tender.
Once cooked, smash the potato using a plate, a hamburger smasher, or any suitable tool.
Heat a skillet until it's very hot, then spray or coat it with olive oil or avocado oil.
Place the smashed potato in the skillet, oil side down, and season it with salt and pepper, or any other preferred seasonings.
Spray the top side of the potato with oil and add more seasoning.
Cook for about five minutes until the bottom is crispy.
After five minutes, spray the edges of the potato and add more salt.
Carefully flip the potato, season the other side, and continue cooking until it becomes crispy as well.
Once done, turn off the heat and grate cheese over the hot potato, allowing the residual heat to melt it.
If desired, top with chopped green onions or chives and a dollop of sour cream, adding extra salt and pepper to taste.
