Chickpea Chocolate Chip Cookies
  1. Preheat oven to 350F.

  2. Drain chickpeas and rinse, blend in a food processor until they're smooth-ish. Scrap from the sides to ensure you blend them all.

  3. Add the rest of your ingredients minus the chocolate chips, blend until smooth.

  4. Fold in choc chips in a bowl, scoop your desired size of cookie on parchment paper & bake for 15-20 min. My cookies were large so they took a while!

  5. Top with sea salt & enjoy!
