Oil Spill Short Rib Noodles
  1. Step 1: Braise the Beef Ribs

  2. Sear the meat: Heat the canola oil in a heavy-bottomed pot or Dutch oven over high heat. Add the beef ribs and sear on all sides until a deep, golden-brown crust forms.

  3. Build the braise: Lower the heat slightly. Add the rock sugar, soy sauce, fermented chili paste, ginger, garlic, and whole spices directly to the pot. Stir gently to let the sugar melt and the paste become fragrant.

  4. Simmer low and slow: Pour in the beef broth until the ribs are mostly submerged. Bring the liquid to a boil, then reduce the heat to low, cover with a lid, and let it simmer for 2 to 2.5 hours (or until the beef is melt-in-your-mouth tender and pulling away from the bone).

  5. Step 2: Prepare the Base

  6. Boil the noodles: Cook your noodles according to the package instructions. In the last 60 seconds of cooking, drop the bok choy into the same boiling water to blanch it.

  7. Drain: Strain the noodles and bok choy. Divide the cooked noodles into your serving bowls.

  8. Sauce the noodles: Toss the hot noodles directly with the light soy sauce, dark soy sauce, and oyster sauce until they are evenly coated and glossy. Arrange the blanched bok choy to the side.

  9. Step 3: Assemble & Sizzle

  10. Add the beef: Place a tender, braised beef rib right on top of the bed of noodles.

  11. Layer the aromatics: Pile the minced garlic, chili flakes, chopped green onions, and fresh cilantro closely together in a neat mound on top of the dish.

  12. Flash-fry with hot oil: Heat your neutral vegetable oil in a small saucepan until it is piping hot and shimmering (just below smoking point).

  13. The Sizzle: Carefully pour the boiling hot oil directly over the minced garlic, chili flakes, and greens. It will loudly bubble and sizzle, instantly cooking the garlic and blooming the chili flakes into a fragrant, fresh chili oil.

  14. Mix everything together thoroughly right before eating so the rich braising juices, noodles, and fresh chili oil combine perfectly!
