Homemade Döner Kebab
  1. Mix ground lamb, grated onion, minced garlic cloves, salt, sweet paprika, oregano, plain yogurt, and olive oil together

  2. Divide the meat mixture in half

  3. Spread each portion very thinly on parchment paper, wetting your fingers for ease

  4. Roll each sheet up into a flat rope using the parchment

  5. Bake at 400°F for 35-40 minutes until fully cooked

  6. Let cool slightly, then unroll and break into pieces

  7. Add a squeeze of lemon and broil briefly for color

  8. Serve the doner in a pita or bowl with lettuce, tomatoes, pickles, red onion, and garlic sauce
