Divide the meat mixture in half
Spread each portion very thinly on parchment paper, wetting your fingers for ease
Roll each sheet up into a flat rope using the parchment
Bake at 400°F for 35-40 minutes until fully cooked
Let cool slightly, then unroll and break into pieces
Add a squeeze of lemon and broil briefly for color
Serve the doner in a pita or bowl with lettuce, tomatoes, pickles, red onion, and garlic sauce
