Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl.
In a small bowl, combine flax mixture, orange juice, zest, oil and water.
Stir into dry ingredients just until moistened. Add additional water if mixture is too thick to stir (this depends on how much juice you got out of your orange).
Fold in cranberries and nuts.
Spoon into a greased loaf pan or four mini-loaf pans.
Bake at 325 degrees F for 1 hour or until bread tests done.
Cool in pan for 10 minutes before removing to a wire rack.
