Blend the pandan leaves with water until smooth. Strain the mixture through a fine sieve or cheesecloth to collect the fragrant pandan juice.
Place the glutinous rice in a large bowl. Add the pandan juice and salt, stirring gently to combine. If you want an even richer flavor, add 300ml of coconut milk to the bowl during soaking. Cover the rice and let it soak for at least 5 hours or overnight.
After soaking, drain the rice well. Line a steamer with cheesecloth or a clean kitchen towel, and steam the rice over medium-high heat for 30-40 minutes. You can sprinkle a little extra coconut milk over the rice halfway through steaming if desired.
While the rice is steaming, prepare your toppings. Lightly roast peanuts and crush them for a crunchy topping. Shred some fresh coconut for extra texture and sweetness. To make a quick coconut milk sauce, combine 100ml coconut milk with 10-20g sugar (about 1-2 tablespoons) and microwave or cook until warm and slightly thickened.
Serve the sticky rice warm, garnished with roasted peanuts, shredded coconut, and a generous drizzle of coconut milk sauce.
