Chimichurri sauce: Add all ingredients to a food processor or blender and pulse until smooth. Store in the fridge until ready to use.
Steak bites: Cut steak into bite-sized pieces. Add to a bowl with the olive oil and seasonings and toss until evenly coated. *marinate in the fridge for 30 minutes, up to overnight, if desired.
Heat a cast iron or heavy bottomed skillet over medium-high heat. Grease if needed. Add the steak and cook for 7-8 minutes or until all sides are browned, flipping/ tossing halfway through.
Remove from heat. Let sit for 10 minutes then serve with chimichurri sauce and enjoy!
