Guinness Stew
  1. Brown the beef in batches in a large pot or dutch oven.

  2. Add the onions, carrots, potatoes, garlic, thyme, and bay leaves.

  3. Pour in the Guinness and season with salt and pepper.

  4. Simmer for 2-3 hours until the beef is very tender.

  5. Adjust seasoning to taste.
