Melt butter in a pan over medium heat, add the apples and cook for a couple of minutes.
Add cinnamon, nutmeg and a pinch of salt, letting the spices toast with the apples, then stir through brown sugar and water.
Let it simmer for around 10 minutes until the apples are soft and coated in a thick syrup.
Remove from the heat and set aside, reserving some syrup for serving.
Lay out the brioche slices, spoon the apple mixture onto two slices, then top with the remaining slices.
Lightly butter the outside then place into your Sandwich press and toast until golden and crisp.
To serve, slice the toastie, dust with icing sugar, serve with a scoop of brown butter ice cream and drizzle over the reserved apple syrup.
