Divide the salad dressing ingredients evenly among 3 mason jars. Whisk until smooth.
Layer ⅓ of the feta, olive, lentils, tomatoes, cucumbers, mango, and mixed greens on top of the dressing in each jar.
Seal, and store in the fridge for up to 5 days.
To serve, invert the ingredients onto a plate, and enjoy!
