Add all dry ingredients to a medium size bowl and mix
Add wet ingredients in another bowl and mix
Add dry ingredients to wet ingredients and mix
Add to lined muffin tin
Add ingredients for cream cheese filling to a bowl, mix with a handheld mixer until smooth and creamy
Pipe cream cheese mixture in the center of muffin
Sprinkle pumpkin seeds around top
Bake 350 F for 15-17 minutes or until a toothpick comes out clean
Let cool for 5 minutes in muffin tin and then transfer to wired cooling rack to cool completely, and enjoy!
I like to store mine in an airtight container in refrigerator
