Limoncello Mascarpone Cake
  1. Preheat oven to 350°F (177°C). Grease and line a 9-inch springform pan.

  2. Whisk flour, baking powder, and salt in a bowl. Set aside.

  3. Rub lemon zest into sugar until sandy. Add eggs and whisk until pale and thick.

  4. Slowly stream in olive oil, limoncello, lemon juice, and sour cream. Mix until smooth.

  5. Fold in dry ingredients. Pour into pan and bake 35–45 minutes.

  6. Cool cake 15 mins in pan, then fully on wire rack.

  7. Chill bowl and whisk, beat mascarpone until smooth.

  8. Add powdered sugar and vanilla. Slowly whip in cream.

  9. Frost cooled cake and swirl in lemon curd. Chill until ready to serve.
