Preheat the oven to 200°C (400°F).
Halve and deseed the peppers. Place them cut side down on a baking tray.
Slice the top off a whole garlic bulb to expose the tops of the cloves. Drizzle with a little olive oil and place on the same baking tray as the peppers.
Roast for 40 minutes until peppers are charred and garlic is soft.
Let the peppers cool, then peel off the skins. Squeeze the garlic cloves out of their skins.
Combine peppers, garlic, feta, cream cheese, lemon juice, honey, paprika, Italian herbs, and basil leaves in a food processor.
Add salt and pepper to taste.
Blend until smooth and creamy, about 3-4 minutes. Adjust consistency with more olive oil or lemon juice if needed.
Transfer to a bowl and garnish with feta cubes, olive oil drizzle, chili flakes, basil leaves, and honey if desired.
