Serves 2
Time: 45 minutes
Poblano sauce: makes 1 cup
Combine all ingredients in a blender. Process until very smooth. The consistency should not be thick and should coat your spoon. If it’s too thick, adjust with water. The pepper acts as your emulsifier, so if the sauce looks broken and separated add another poblano.
Broiled Fish:
Preheat broiler or preheat oven to 450F
For the black sea bass, using a sharp knife make 3 large incisions on each side.
Coat fish with oil and season with salt, black pepper and coriander.
Place on an oiled wired rack with a sheet tray.
Cook for 7 minutes. (Keep an eye on it, as all broilers are different)
Carefully flip fish over and cook for another 7 minutes until slightly charred.
Serve with cooked rice or tortillas with poblano sauce and tomatillos.
Tomatillos:
Combine in a small bowl and mix until tomatillos and cilantro are evenly coated.
