Roasted Tomato Sauce
  1. Add all ingredients to a sheet pan except the herbs and toss gently with your hands.

  2. Roast uncovered at 400 degrees for 25 minutes.

  3. Remove from oven and spoon vegetables into food processor or large bowl. Add fresh herbs now too. Using processor or immersion blender, puree vegetables and herbs to use immediately or can or freeze.
