Iron-boost High-protein Choc Cookies
  1. Preheat oven to 180°C (fan-forced if possible) and line a baking tray with baking paper.

  2. In a food processor, blend chickpeas, peanut butter, almond flour, protein powder, chia seeds, flaxseeds, blackstrap molasses, cacao powder, maple syrup, vanilla, baking powder, cinnamon until smooth.

  3. Fold in the chocolate chips, nuts or pumpkin seeds if using.

  4. Scoop tablespoon-sized portions onto the tray and flatten slightly with a fork or a glass.

  5. Bake for 12–14 minutes or until slightly golden around the edges. Allow to cool for a few minutes before serving.
