Prep: Preheat oven to 175 °C (350 °F). Grease and line two 8×8 in pans with parchment.
Mix wet: In a large bowl, whisk together the pear sauce, melted vegetable ghee, sugar, water.
Mix dry: In another bowl, sift together flour, cocoa, baking powder, salt, vanilla sugar, rum sugar, and spices.
Combine: Fold the dry ingredients into the wet until just combined (don’t overmix). Batter will be thick but spreadable.
Divide: Spread evenly into the prepared pans.
Make streusel: Mix flour, sugar, almonds, cinnamon, and salt. Rub in the vegetable ghee with your fingertips until crumbly.
Top cakes: Sprinkle streusel evenly over both pans of batter.
Bake: 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Cool: Let cool in pans at least 20 minutes before cutting.
