Lorraine Fryett's Tour Eiffel Cookies

from: American Heritage Cookbook 1964. original recipe is called "SAND TARTS" and cookies are brushed with milk and sprinkled with a mixture of sugar and cinnamon.

  1. Sift together flour, salt and baking powder.

  2. Cream butter and vanilla until soft.

  3. Then add sugar a little at a time.

  4. Work the mixture until light and fluffy.

  5. Add unbeaten egg and extra egg yolk, beating well.

  6. OPTIONAL: Add orange or lemon peel.

  7. Mix in the flour mixture and beat hard.

  8. Chill dough in refrigerator or several hours or overnight.

  9. Divide dough into portions; roll out one portion at a time on pastry cloth or floured board until thin.

  10. [ If dough becomes too soft to handle return to refrigerator and chill. ]

  11. Cut with cookie cutter, place on ungreased cookie sheet.

  12. Brush tops with milk, sprinkle with natural coarse sugar.

  13. Bake in 350° oven for 8-10 minutes or until edges of cookies turn a delicate brown.
