Saute onion in oil til translucent.
Add in mushroom, garlic, carrot, and celery, cook til softened
Add in seasonings and bouillon, stir til well combined
Add water and rice.
Bring to a simmer and let cook for 45 minutes or until rice in tender
Add in heavy cream and cheese
(optional) you can add extra broth fo seasonings now :) I like to serve with bread/butter or top with worsteshire and crispy cennelini beans.
