Asparagus Pie
  1. Preheat oven to 425. Prepare the asparagus by boiling for 7 minutes.

  2. Beat the eggs. Season with parsley, olive oil, salt and pepper and ½ cup of cheese.

  3. Prepare 9 x 13 baking dish. Drizzle with extra virgin olive oil and dust with seasoned breadcrumbs to coat the bottom.

  4. Lay asparagus in neat rows in bottom of pan. Sprinkle chopped garlic over top. Pour egg mixture overtop.

  5. Sprinkle lightly with breadcrumbs and top with remaining cheese. Drizzle with olive oil.

  6. Bake at 425 for 30 minutes.
