Quinoa Puree
Cook the quinoa according to the package directions.
Let the quinoa cool slightly and then add to a blender, along with 1 cup water. Puree and add up to an extra ¼ cup water as needed to help thin out the mixture. Be sure to scrape the bottom of the blender, as well as the sides, as some of the quinoa can clump and become gummy.
Black Bean Puree
Place the black beans in a colander. Rinse really well until the water runs clear, and then drain. (If you’d like to use dried beans, use the package instructions for hydrating and cooking them).
Add the black beans to a blender, along with ¼ to ½ cup water. Process until very smooth, scraping down the sides and adding an extra splash or two of water as needed.
Zucchini Puree
In a medium pot, bring ½ cup water to a low boil. Add the zucchini, return to a boil, and then lower the heat to medium-low and cook for 4 to 5 minutes, until tender.
Transfer the cooked zucchini, but not the cooking liquid, to a blender. Process until smooth, scraping down the sides as needed.
Quinoa, Zucchini, and Black Bean Puree
In a small bowl, combine the Quinoa Puree, Black Bean Puree, and Zucchini Puree until well mixed. Add a splash or two of water as needed to reach the desired consistency.
Serve immediately or store until ready to use. Store in an airtight container in the refrigerator for 3 to 5 days or in the freezer for 4 to 6 months.
This delicious combination offers whole grains, protein, and fiber. It is a great way to incorporate a vegetable! This can be served warm or cold, and you can add some fun seasonings and toppings for older babies, if desired.
