Honey Garlic Chicken Mince
  1. Heat extra virgin olive oil in a large frypan on medium-high heat.

  2. Add chicken mince and cook, breaking it up with a spoon to prevent lumps forming and to develop some light browning - approximately 7 minutes.

  3. Meanwhile, make sauce by mixing all ingredients together in a small jug except for the cornflour. Take a small bowl and add the cornflour and a few spoons of the sauce. Mix until smooth and add this back to the jug. This prevents lumps from forming.

  4. Add finely chopped garlic and sliced spring onion to the mince and cook stirring for 1 minute.

  5. Add chopped broccolini and cook for 2-3 minutes.

  6. Add sauce and cook stirring while it thickens for a further minute.

  7. Serve either in a bowl with cooked rice and shredded coleslaw, or in a long roll with shredded coleslaw, sriracha and a sprinkle of sesame seeds.
