Remove the florets from the stalks and save them for something else. Lightly peel the stalks and dice them up.
Fry your tomatillos, serranos, and stalks in 1 tbsp oil for a few minutes over medium heat. Add your onions and garlic. Continue to cook everything until veggies have a nice sear.
Add 1 cup of water, cover, reduce heat to medium low, and cook for about 10 minutes.
Add everything but the tomatillos to your blender with a little bit of the water and 1 tsp salt. Blend until almost smooth.
Add in your tomatillos, cilantro, and continue to blend. Slowly drizzle in 1 tbsp oil. Now blend until smooth.
