spinach pasta

Noodles:

3 large handfuls of spinach

12 tbsp flour

a pinch of salt

Sauce:

3 large handfuls of spinach

½ bunch of fresh basil, coriander or parsley

Salt and pepper to taste

30g cashews (soaked)

2 tbsp olive oil

Juice ½ lemon

Mix noodle ingredients until a dough forms.
Knead a few times by hand and cover while making the sauce.
Mix sauce ingredients until creamy.
Heat up a pot of salted water.
Cut the dough into the water using a scissor and cook until the pasta float to the top.
Scoop off and mix with some of the pesto in a pan.
