  1. In a large bowl, whisk together the flour, baking powder, and salt. Gradually add the warm water (and milk, if using) to the dry ingredients, stirring with a fork or your hands until the dough comes together.

  2. Turn the dough onto a lightly floured surface and knead for about 5 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little more flour.

  3. Cover the dough with a clean towel and let it rest for 30 minutes. This helps it relax and makes it easier to roll out.

  4. Divide the dough into 8 equal pieces. Roll each piece into a ball, then flatten it with your hands or a rolling pin into a disc about ¼-inch thick. The shape doesn't have to be perfect.

  5. In a large skillet or deep fryer, heat about 1-2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. Carefully place each dough disc into the hot oil, one at a time. Fry for 1-2 minutes on each side, or until golden brown and puffed up. Use tongs to turn the bread and remove it from the oil.

  7. Drain the frybread on paper towels to remove excess oil. Serve warm, topped with your favorite toppings such as honey, powdered sugar, or savory toppings like taco filling.
