Dates with an Orange Belt
  1. Line a smal rimmed sheet pan with parchment paper.

  2. Carefully pry each date open. Remove the pit and replace it with an almond Seal the date back up to enclose the almond

  3. To make the orange belts: Use a vegetable peeler to peel one long strip of orange zest around the equator of each orange: Cut each strip crosswise into thirds. Then cut each section lengthwise into 2 narrower strips about ¼ inch thick (you should get 12 total. Trim the length of each strip so it can wrap around the middle of a date (like a belt), having the ends meet but not overlap. Put the betts aside.

  4. In a small microwave safe glass bowi, combine the chocolate chips and coconut oil Melt in 10 second intervals, stirring each time, until melted and smooth, being careful not to overheat the chocolate. Or melt in a heatproof glass bowl set over a pan of simmering water (don't let the bowl touch the water).

  5. Dip half of each date in the melted chocolate. Wrap a belt around the chocolate-covered middle of each date. Place on the prepared pan, with the open ends of the belt down.

  6. Refrigerate for about 10 minutes, or until the chocolate is set. Serve or store in an airtight container in the refrigerator for up to 1 week.
