Place your chicken cutlets in a bowl.
Add your eggs, seasonings, and soy sauce, and minced garlic cloves.

Grab two pieces of parchment parchment, one for bread crumbs the other for your breaded cutlets.
Spread your bread crumbs and sesame seeds and toss together.
Using two hands, one for wet one for dry. I use my dominant for the dry.
Place the cutlet into the bread crumbs and coat on both sides real well. Set aside.
Place a clean piece of parchment paper into the frying pan and fill with oil. Bring to a medium heat. Parchment paper will not burn. MAKE SURE THE PAPER IS NOT HIGHER THAN THE PAN.
Place your breaded schnitzellim into the hot oil and fry for about 3 minutes in each side. For thicker cutlets you may need more time. For heat results, keep temperature on low to medium at all times while frying.
Remove to a wire rack for an added crisp.
