Spiced Butternut Squash Peels Recipe
  1. Preheat oven to 450F

  2. Wash and peel the outside layer of a medium butternut squash (you'll need a good peeler for this, or you can pierce the skin and microwave it for a few mins to soften it)

  3. Peel the whole squash until you get to the seeds, then spray light oil on a baking sheet and toss on your peels with cumin, salt, parsley and onion powder. (I made 2 batches with this squash, it makes a LOT, so be sure not to over layer on the pan for even cooking)

  4. Bake for 15mins at 450F - you can broil for the final 2 mins to crisp the edges a bit if you want as well!

  5. Remove from the oven and lightly drizzle pomegranate molasses on top(too much will overpower it), and sprinkle on walnuts and fresh parsley then serve!
