Break eggs into a large bowl. Add crab meat, soy sauce, salt, pepper, and cornstarch, and beat
Heat a pan, add 2 tablespoons oil and sauté vegetables 1 minute. Remove and let cool.
Add vegetables to eggs and crab meat and mix well.
Reheat pan, add 2 tablespoons oil, and fry in small omelets of two tablespoons each, adding oil as necessary.
Combine sauce ingredients and bring to a boil. Simmer until mixture thickens, stirring constantly. Pour over omelettes and garnish with parsley.
