Preheat your oven to 350°F. Line a baking sheet with parchment paper and spray with Chosen Foods avocado oil spray.
In a large bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.
Add your Chosen Foods avocado oil shortening to the dry ingredients and mix until the mixture resembles coarse crumbs.
Stir in the parmesan cheese, sun-dried tomatoes, olives, Aleppo pepper, and thyme
In a small bowl, whisk together the Greek yogurt and egg. Pour the mixture into the dry ingredients and stir until just combined, dont overmix!
Divide the dough into 8-10 portions. Form into biscuit shapes and place them on the prepared baking sheet.
Bake in the preheated oven for 20-22 minutes, or until the biscuits are golden brown and firm to the touch.
Let the biscuits cool slightly before serving
