  1. Combine the water, yeast, and honey in a bowl.

  2. Add the flour and mix until it forms a rough dough.

  3. Cover the bowl and let it rest at room temperature for one hour.

  4. Refrigerate for 16 to 24 hours.

  5. Ingredients:

  1. Combine the poolish, flour, and salt. Gradually add the cold water and mix until the dough is soft, sticky, and smooth. This can be done with a mixer or by hand on a counter.

  2. Lightly coat a clean surface with olive oil. Transfer the dough to the surface and shape it into a ball.

  3. Place the dough ball in an oiled container and cover it. Let it rest for 16 to 24 hours in the refrigerator.

  4. The next day, divide the dough into portions and shape each into a ball. Allow the balls to rest at room temperature for 1 to 2 hours, or until they have doubled in size.
