Preheat your oven to 190c.
Roughly crumble the tofu, then add to a bowl with your remaining ingredients aside from the sun dried tomatoes, and mix well.
Add to a lined baking tray and spread out the mix evenly.
Bake for 18-20 minutes, stir & turn the mix regularly as this will colour very quickly! Add another extra drizzle of oil if it starts to dry out
Remove from the oven and leave to cool slightly.
Heat up your tortillas, and layer each one with a tbsp of sour cream, a couple of slices of avo and the vegan chorizo. Top with feta, a jalapeño slice and a squeeze of fresh lime.
