In a skillet over medium heat cook down your chorizo. Season with a pinch of salt.
While the chorizo cooks fry your beans in a little oil. Add a splash of water to thin them out. Let them simmer over medium low heat for 10 mins.
Mash them, and season with chicken bouillon & a pinch of salt. Let them simmer until thickened (about 3-4 mins).
Right before your chorizo is cooked add slices of chorizo right on top. Reduce heat & cover until cheese is melted.
Slather mayo on the inside of your halved bolios.
Toast them on a comal over medium heat until both sides are nicely toasted.
When ready to build, add your beans & mayo to your bolios, add the chorizo, and finally the rest of your desired ingredients.
