Preheat oven to 400°F. Toss drumsticks with oil, garlic, paprika, thyme, parsley, salt, and pepper. Roast for 35–40 minutes until golden and crisp.
Steam or boil carrots until tender. Toss with butter, honey, salt, and pepper.
Boil potatoes until fork-tender. Mash with butter, warm milk, garlic powder, salt, and pepper until creamy.
Plate drumsticks with mashed potatoes and glazed carrots. Garnish with parsley.
