Fattoush Salad
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. To a medium mixing bowl, add the pita squares and spray with olive oil cooking spray, then sprinkle za'atar over the top. Mix the pita with your hands to coat evenly with the oil and seasoning. Spread the pita squares onto the parchment-lined baking sheet. Bake for 8 to 12 minutes, or until crispy. Take care not to let the pita chips burn. Set aside.

  3. While the homemade pita chips bake, in a large bowl, combine the romaine, tomato, bell peppers, cucumber, radishes, parsley, and crumbled feta cheese.

  4. To the assembled salad, add the crispy pita chips. Pour as much or as little dressing as you want over top. Toss and serve.
