Boil or steam a whole head of cabbage for 5–10 minutes until leaves are tender, then drain well and pat dry.
Brown ground meat with garlic and onion, then mix in marinara sauce.
Combine ricotta (or cottage cheese) with an egg, parmesan, and sautéed spinach.
Layer sauce, cabbage leaves, cheese mixture, and meat. Repeat and top with mozzarella.
Bake covered at 400°F for 30-40 minutes, then uncovered for 10 minutes to brown the cheese.
