Cheesy Queso Chicken Enchiladas
  1. Preheat oven to 350°F and lightly grease a 9x13 baking dish.

  2. In a large bowl, mix shredded chicken, 1 cup cheese, sour cream, queso, Rotel, garlic powder, onion powder, chili powder, cumin, and salt.

  3. Lay a tortilla flat and spoon ¼–⅓ cup of filling down the center. Roll tightly and place seam-side down in the baking dish.

  4. Repeat until the dish is full.

  5. Spread extra queso or a little sour cream over the top (optional but amazing).

  6. Sprinkle the remaining cheese evenly on top.

  7. Bake for 20–25 minutes, until the cheese is fully melted and bubbly.

  8. Add desired toppings and serve warm.
